ABSTRACT

The United States is intensely carnivorous. In 2012, we processed 8.6 billion chickens, 250 million turkeys, 32.1 million cattle, 113.2 million hogs, and 2.2 million sheep and lambs.2 That is more than a chicken per person living on planet Earth as of September 2014,3 which should give pause to thought on the efficiency of our meat production, distribution, and processing system.
